This healthy pumpkin spice latte is the perfect way to warm up on those chilly autumn days! Plus, it’s low in sugar and a dairy-free and vegan option!

Woah baby, it has been a crazy busy week! This has been the first chance I’ve really had to plunk myself down!

Yesterday, I had a large tour of teenagers come into the store to learn all about healthy eating. They had some great questions and were really keen about nutrition, which always gets me really excited! I love when young people care about their health and wellness.

The only problem was, after talking at the top of my lungs for 2 hours, my voice was completely shot by the end of the day.

There is no better feeling than coming home after a long busy day, and putting on some comfy clothes…and having a warm and soothing drink.

Generally, my beverage of choice is tea, but lately I’ve decided to go more with a fall-ish theme just to switch it up a bit.

I hear so much buzz about the Pumpkin Spice Latte at Starbucks.

I’m not gonna lie.

I’ve never once tried it, but I know that it’s LOADED with sugar and artificial ingredients.

That’s probably one of the reasons I have yet to try it.

Given this fact, it only made sense to come up with my own version of the #PSL.

A healthier version.

The version I created uses real pumpkin puree for a shot of vitamin A, some almond milk for creaminess (and some added calcium!), and a bit of coffee, maple syrup and autumn spices for a jolt of antioxidants.

The awesome thing about making your own PSL is that you can adjust the sweetness of it according to your preference and lifestyle goals.

That’s my kind of PSL!

Maple Pumpkin Spice Latte

Yield: Makes 2 servings

Ingredients

  • 1 cup unsweetened almond milk
  • 1 cup hot brewed coffee (or extra almond milk)
  • 2 Tbsp. pumpkin puree
  • 1-2 Tbsp. pure maple syrup
  • ¼ tsp. pumpkin pie spice
  • ¼ tsp. cinnamon
  • ½ tsp. vanilla extract

Instructions

  1. Blend all of the ingredients in a blender until the contents are combined. Pour the mixture into a medium sized pot and place over medium heat until the mixture is hot. Pour into two mugs. Enjoy!

So I mentioned that I’ve been on a major decorating kick lately.

Yeah. Well it hasn’t stopped.

I actually think it’s getting worse.

When I was younger, I was always a tad crafty, but nothing to write home about.

I would make my own cards and colour, but that was about it.

Lately though?

I’ve become borderline OBSESSED with DIY projects and decorating.

I love it because it unleashes my creative side. I get to dream up all of these pretty ideas, and then get to work creating them!

Take this little bedroom for example.

In Matt’s new house, he has three bedrooms. One is his bedroom, the other is his office, and the other was pretty much empty.

He basically gave me permission to do whatever I wanted to the “other room.”

It didn’t take me long to get to work.

I made it my personal mission to transform that room into the prettiest little room ever.

It all started with this gorgeous picture that I saw one day while walking through Leon’s Home Furniture store. Basically, it’s a big picture of a wedding dress with sparkles and bling.

Now, some might think that I was secretly hinting about getting married with the whole wedding dress thing. But I totally wasn’t.

I swear.

I just fell in love with the picture.

But I wouldn’t complain about the getting married part ;)

As soon as I saw that beauty of a picture, I immediately starting having visions of the colour blush, white, nude, pretty peonies and shiny accessories.

I created the flower arrangement for less than $30 by picking up a vase at Home Sense, and ordering the flowers from amazon. So much cheaper when you make your own flower arrangement. Plus, you can customize it to look EXACTLY how you want it to look.

I found the rest of my accessories like the crystal candle holders, silver Eiffel Tower, blush throw, mirror and pretty pillows at Home Sense (my favourite place of all-times!!). And I got the tall pink candles at Michael’s. Bouclair is also one of my favourite décor and furniture stores to shop for home accessories. You gotta check out their amazing stuff!

I instantly fell in love with that little room. Love at first sight.

I’m pretty sure Matt did too, even though he won’t fully admit it. I have caught him peeking in there though, so I totally know he loves it too.

The past few days, I have been seriously struggling with outfit decisions.

Last weekend, we were being warned that we could expect up to 15 cm of snow…. which didn’t happen.

We got a little dusting of snow on the ground.

And then this past week, the temperatures were hovering around 20 degrees Celsius!

What the heck??!!

It doesn’t help that I work in a grocery store where the temperatures fluctuate even more!

One day, I’ll be freezing, the next day….boiling.

Yesterday, I was doing a major clean up of all my nutrition resources and I must have ran up and down the stairs hauling boxes at least 20 times.

Talk about a sweat session. I should’ve just worn my gym clothes to work!

Complete.

Anyways.

This in-between type of weather really messes with my ability to select an outfit. Enough said.

These days, I’ve been loving little fall dresses because you can layer them up when you’re cold and strip down those layers when you’re having a serious hot flash.

It’s perfect for those days when fall is in the air with a glimpse of summer still to be seen.

And then when I start seeing a glimpse of winter, I just throw on a pair of black tights, some black boots and a little sweater.

So it’s my first week back to work after my week of vacation, and I’m JUST starting to find my groove again.

Yeah..three days later.

It takes me a while.

Vacation has a weird way of messing with my system. This past week, I really just wanted to get caught up on life again.

You know, like do the stuff that I never seem to have quite enough time for.

Working out, testing recipes, shooting recipes, shooting more recipes…sleeping in a bit.

My favourite part about last week was having some extra time to test out some new recipes and do photo shoots galore!

One of the recipes that I made was this yummy cauliflower soup.

It’s super healthy because it’s basically just vegetables pureed with a bunch of broth and spices. No cream whatsoever, which makes it into a much lighter version, that’s equally satisfying.

And it’s such a great way to sneak some extra vegetables into the day, ESPECIALLY for those non-veggie lovers.

Because I work with so many picky eaters who don’t like to actually physically chew on vegetables (which boggles my mind!!), I’m constantly trying to find different ways of incorporating some of those extra nutrients into their day.

This cauliflower soup does the trick.

Plus, who doesn’t like a nice warm bowl of soup?!

It’s SO warm and comforting, especially after being out and about in the chilly weather.

As much as I don’t like the cold weather, it’s gonna come whether we like it or not, so might as well make the best of it….with some delicious soup, of course ;)

Creamy Cauliflower Soup

Yield: Makes 6 servings

Ingredients

  • 2 tsp. olive oil
  • 1 medium onion, chopped
  • 1 small head of cauliflower, cut into florets
  • 1 medium baking potato, peeled and diced
  • 1 tsp. rubbed sage
  • 1 tsp. dried thyme
  • 1 tsp. dry mustard
  • 1 tsp. celery seed
  • 4 cups reduced-sodium vegetable broth
  • Salt and pepper, to taste

Instructions

  1. Heat the oil in a large saucepan set over low heat. Add the onion and celery and cook, stirring often, for about 5 minutes.
  2. Add the cauliflower and diced potato and cook for one minute, stirring often. Sprinkle the sage, mustard, and celery seed over the vegetables, stir until evenly distributed. Cook for approximately 20 seconds, or until fragrant.
  3. Pour in broth and bring to a simmer over medium-high heat. Cover, reduce heat to low, and simmer until the potato and cauliflower are soft when pierced with a fork, about 15 minutes.
  4. Working in batches, puree the soup in a large blender, scraping down the sides as necessary. Return the puree to the saucepan, set over medium heat, and cook just until heated through, about 1 minute. Season with salt and pepper, to taste.
