Oh boy oh boy…what an exciting week this has been! Although this Spinach, Orange and Pomegranate Salad is pretty awesome, it’s gonna have to wait for just a second while I share some super exciting news. So here goes…
I got engaged on Sunday night!!!!!
Eeeeek!!! Seriously a dream come true. Especially since it happened right before Christmas! Matt and I had never once talked about getting engaged at Christmas, but it was the best surprise EVER! It turns out that he had been planning it out for months and I was completely clueless that all of this was happening. All I know is that I’ve never been happier in my entire life!
I’ve actually had to slap myself over the past few days just to make sure that I’m not dreaming! Definitely living in a little fairytale land right now :)
So I’m predicting that between moving jobs, moving into a new house and town, and planning a wedding next year, I’m gonna be a pretty busy girl. I apologize in advance if I drop off the face of the earth, but I’m going to try my best to keep the recipes comin’!
At this point, talking about a salad doesn’t seem nearly as exciting or interesting as talking about sparkly engagement rings (yes, it’s very blingy and sparkly!!), but I made this salad recipe several weeks ago and really loved it, so I thought I would share! I especially love the bright, happy and festive colours (reflects EXACTLY how I’m feeling right now!), and the fresh burst of juicy flavour from the pomegranate seeds and oranges. It’s like a party in your mouth!
I don’t know about you, but I’m gonna be partying it up this Christmas! Definitely a time to celebrate with family and friends! :)
- 5 cups baby spinach
- Arils (seeds) of one large pomegranate
- 1 large orange, segmented and chopped into 1 inch pieces
- 1/3 cup sliced almonds
- 2 cloves garlic, minced
- 2 tsp. freshly squeezed orange juice
- 1/4 cup apple cider vinegar
- 1 tbsp. Dijon mustard
- 1/4 tsp. salt
- Pinch of freshly ground black pepper
- 1/4 tsp. honey
- 3/4 cup extra-virgin olive oil
- In a large bowl, toss the ingredients for the salad together.
- In a small bowl or mini blender, mix together all of the dressing ingredients until well combined.
- Pour desired amount of dressing on the salad and toss to combine.
