Spinach, Orange & Pomegranate Salad

This salad is filled with bright festive colours and refreshing flavours! The perfect way to sneak in some extra servings of fruits and vegetables this holiday season!

Oh boy oh boy…what an exciting week this has been! Although this Spinach, Orange and Pomegranate Salad is pretty awesome, it’s gonna have to wait for just a second while I share some super exciting news. So here goes…

I got engaged on Sunday night!!!!!

Eeeeek!!! Seriously a dream come true. Especially since it happened right before Christmas! Matt and I had never once talked about getting engaged at Christmas, but it was the best surprise EVER! It turns out that he had been planning it out for months and I was completely clueless that all of this was happening. All I know is that I’ve never been happier in my entire life!

I’ve actually had to slap myself over the past few days just to make sure that I’m not dreaming! Definitely living in a little fairytale land right now :)

So I’m predicting that between moving jobs, moving into a new house and town, and planning a wedding next year, I’m gonna be a pretty busy girl. I apologize in advance if I drop off the face of the earth, but I’m going to try my best to keep the recipes comin’!

So recipes…

At this point, talking about a salad doesn’t seem nearly as exciting or interesting as talking about sparkly engagement rings (yes, it’s very blingy and sparkly!!), but I made this salad recipe several weeks ago and really loved it, so I thought I would share! I especially love the bright, happy and festive colours (reflects EXACTLY how I’m feeling right now!), and the fresh burst of juicy flavour from the pomegranate seeds and oranges. It’s like a party in your mouth!

Spinach, Orange & Pomegranate Salad

Yield: Makes 6 servings


    For the salad:
  • 5 cups baby spinach
  • Arils (seeds) of one large pomegranate
  • 1 large orange, segmented and chopped into 1 inch pieces
  • 1/3 cup sliced almonds
  • For the dressing:
  • 2 cloves garlic, minced
  • 2 tsp. freshly squeezed orange juice
  • 1/4 cup apple cider vinegar
  • 1 tbsp. Dijon mustard
  • 1/4 tsp. salt
  • Pinch of freshly ground black pepper
  • 1/4 tsp. honey
  • 3/4 cup extra-virgin olive oil


  1. In a large bowl, toss the ingredients for the salad together.
  2. In a small bowl or mini blender, mix together all of the dressing ingredients until well combined.
  3. Pour desired amount of dressing on the salad and toss to combine.

Mediterranean Bruschetta Spread

This Mediterranean Bruschetta Spread is incredibly healthy and versatile! Use it on cucumber slices, chicken, burgers, a baguette or with pita chips for a dose of Mediterranean flair! 

The other day at work, I whipped up some these really cute Mediterranean Cucumber Cups inspired by The Comfort of Cooking as an idea for a healthy holiday appetizer. They were SO delicious and the presentation was beautiful! I had doubled the recipe for the bruschetta mix, not quite knowing how much I was going to need for all of my cucumber slices.

Well, it turns out that I ran out of cucumber (darn!), so then suddenly I was stuck with an overwhelming amount of this bruschetta mix. #Dietitianproblems! So me, not wanting to waste any good food, started topping up EVERYTHING possible with this Mediterranean Bruchetta mix. I mean ever-y-thing!

I put it on my salad for 4 days straight, baked chicken breasts (yum!), burgers (double yum!), and even decided to top up a leftover baguette with some of this mix.

It was gone in 5 minutes TOPS! It would also be awesome with baked homemade pita chips! I love how this mix is filled with tons of healthy ingredients and Mediterranean flavours. My favourite type of food is Greek, so this is the perfect way to incorporate a little Greek into lots of different dishes!

Mediterranean Bruschetta Spread


  • 1 small red onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 vine ripe tomatoes, finely chopped
  • 1/4 cup black olives, pitted and chopped
  • 1/2 tablespoon dried oregano
  • 1/4 cup fresh feta, crumbled
  • 1/2 cup fresh parsley, finely chopped
  • Juice of 1 lemon, plus 1 tbsp. lemon zest
  • 2 tbsp. extra virgin olive oil
  • 1 clove garlic, minced
  • Salt and ground black pepper, to taste


  1. In a large mixing bowl, mix together all the ingredients. Season with salt and pepper, to taste.

Today, I want to share a super simple, but yummy and healthy snack that I’ve made at least four times over the past two weeks.

Chocolate Dipped Clementines with Chopped Pistachios

I love making these  at this time of year because it reminds me of those orange flavoured chocolate things that you smack. You know the ones I’m talking about, right? My mom used to always put them in our stocking every year.

What I love about these little clementines is that:

  1. They’re actually real food, as opposed to a bunch of processed junk in a wrapper
  2. They’re SO simple to make
  3. When you bite into a slice, you get this burst of juicy flavour, chocolatey goodness and crunchiness ALL at the same time!

These little clementine slices have made several appearances at work during my food demonstrations, at a brunch for friends….. and for my family to polish off….VERY quickly I might add. They are ALWAYS a hit!

Just to give you an idea about how delicious they really are, I’ll tell you a little bit about my little bro Jordan. Jordan used to be the pickiest kid EVER. He wouldn’t eat anything I made because he thought I cast some kind of healthy spell over it. Such a horrible sister, right?

Lately though, his taste buds have been maturing (thank goodness!!) and he’s actually been trying some of the stuff that I make.

HUGE shocker!

Chocolate Dipped Clementines with Chopped Pistachios

I made a bunch of these chocolate dipped clementines last Friday, and put them in a container and left them out on the table. I went upstairs for a few minutes and I swear they were gone within 10 minutes.

And it was ALL Jordan.

No help whatsoever.

I was pretty impressed.

I highly recommend  that you serve these up over the holidays as a little appetizer or healthy snack. But make a lot because they won’t last long!!

Chocolate Dipped Clementines with Chopped Pistachios

Yield: Makes approximately 8 servings


  • 4 darling clementines, separated into slices
  • ½ cup dark chocolate chips, melted (I used 50% cocoa)
  • 2 tbsp. chopped pistachios


  1. Line a baking sheet with parchment paper.
  2. Separate clementines into slices, removing any of the white stringy pieces.
  3. In a small bowl, melt the chocolate chips in the microwave for about 1-2 minutes. Stir until smooth and creamy.
  4. One at a time, dip each of the clementines into the melted chocolate until approximately one third of the slice is covered. Place on the parchment paper and sprinkle with some chopped pistachios until the chocolate portion is lightly covered. Continue until all of the slices have been completed.
  5. Place the parchment lined baking sheet in the fridge until the chocolate has fully hardened, approximately 10-15 minutes.
  6. Eat immediately, or store in a covered container in the fridge to prevent the clementines from drying out.

I can hardly believe that Christmas is in a little over two weeks! It doesn’t feel like it at all with the weather we’ve been getting lately, but I’m definitely not complaining.

This year, Christmas is especially big because it also marks the time that my whole entire life is going to change. Like I mean COMPLETELY change.

In just a couple of weeks, I’ll be saying goodbye to my job, my home, my family and the community where I was raised and starting a brand new life in a brand new place.

I kind of feel like these snowmen. One is rejoicing…the other one looks a little terrified. That’s me right about now…

As much as it will be difficult to leave all of this behind, I’m also very lucky to have found a guy worth moving for, who also happens to be very smart (and cute!) and decided to buy a beautiful house several months ago. I’m not gonna lie. At the time, I didn’t 100% understand why he did it, but now I’m totally glad he did.

You might have seen me refer to Matt’s house throughout my decorating posts….BUT now, I’m excited to announce that it will be my home too!

With all of the decorating I’ve been doing over the past few months in the house, it’s pretty much like I’ve already moved in. But now I’m OFFICIALLY moving in! Eeeek!

This was the first year that we’ve had an actual house to decorate ourselves (without living in our parents’ house), so we had to buy a Christmas tree and some decorations to get us started. Of course, I didn’t mind at all since I love shopping..and decorating.

Between Michaels, Home Sense and the Dollar Store, we managed to pick up pretty much everything that we needed to get us in the holiday spirit. Not bad for our first year, right?

Now I’m all about glamming it up for the holidays….and every season as you may have noticed. So I insisted that we needed some shiny and sparkly decorations for the wow factor.

When I asked Matt if he liked all of the decorations, he said that he loved it BUT also felt that something was missing.


He insisted that we definitely needed Santa for that traditional Christmas feel.

How could we possibly forget Santa?!

Now I’ve always loved Santa too, so I didn’t argue too much about having him hang out in the living room.

The fireplace mantel was my favourite part to decorate since it can be seen right from the front door and as soon as you come down the stairs.

I definitely wanted it to be pretty.

It’s so magical in the living room…especially at night time when the little twinkling lights are all turned on and the fire place is burning. I’ll be sad to take it all down!

But for now, I’m going to enjoy this exciting time and look forward to moving into my new home!!
