I have a guilty confession.

When I was a kid, I was not a big fan of vegetables.

In particular, there were some vegetables that I REALLY didn’t like.

Especially broccoli, mushrooms, and “mushy tomatoes”….. those are the ones that immediately come to mind.

I remember when my mom wasn’t looking, I would gather the vegetables up from my plate and wrap them up in a napkin or paper towel and pretend that I had to go to the bathroom.

I would then sneak the wad of paper towel with all of the hidden veggies into the bathroom and dump them into the garbage can.

I’m pretty sure she didn’t detect a thing.

I was a sneaky kid.

Fast forward years later, and I became a Registered Dietitian.

Yeah, I know, right?

Now the majority of my days are spent speaking, counseling, and teaching about the benefits of vegetables.

When I’m not verbally communicating about vegetables, I’m usually eating them.

Funny how life can take a sudden twist like that.

Now I’m all about making veggies not only look beautiful, but also taste delicious to inspire more people to eat them.

For all the veggie haters out there, you might be thinking…. ‘wait a second…vegetables can actually taste good?!’

Yes, my friends. They certainly can.

I’m SUPER excited about the release of this brand new cookbook that I contributed to, called “The Casual Veggie.”

It’s filled with information about how to prepare and store the 29 most common vegetables, as well as their nutritional benefits.

It also includes tons of recipes (166 to be exact!!) for inspiration on how to prepare and cook each of the specific vegetables.

It’s the perfect resource for those looking to increase their vegetable intake, but feel overwhelmed and don’t know where to start! It’s geared towards people who want to eat home cooked meals, using real food, with a focus on plants. And let me just say…this isn’t just any ol’ cookbook.  It’s a tool to help you live and eat healthier!

The cookbook will be released and available to purchase in just a few weeks!!! Mark October 19th on your calendar!
