Trail Mix Energy Bites

These energy bites are like eating trail mix in a ball! Quick, easy and heart-healthy! 

These energy bites are seriously the best! Whenever I get the urge to whip up a batch of energy bites, these are always my go to. They are super easy to make, only requiring one bowl (less dishes!!), and taste absolutely delicious! Nutty with a bit of chocolate-ly flavour and  just the right amount of crunch. They’re not only a great source of heart healthy fats and fibre from the nuts, seeds and flaxseed, but also have a kick of antioxidants from the dark chocolate. I love snacking on these pre or post workout along with some Greek yogurt for some extra protein. Totally hits the spot and satisfies that sweet tooth! Plus, you can make a double batch and freeze them for a quick and easy snack on the go! Who doesn’t love quick, awesome and healthy snacks? This one is always a winner!

Trail Mix Energy Bites

Yield: Makes approximately 28 bites

Ingredients

  • 1 cup rolled oats (gluten-free if necessary)
  • 1 cup almond butter
  • 1/2 cup ground flaxseed
  • ¼ cup dark chocolate chips
  • 1/4 cup sunflower seeds
  • 1/4 cup honey
  • 1 tsp. vanilla extract
  • ½ cup raw sliced almonds, crushed, for garnish

Instructions

  1. Mix all the ingredients together (except for the sliced almonds) until everything is well incorporated. Refrigerate mixture for at least 30 minutes.
  2. In the meantime, place sliced almonds in a Ziploc bag and close the bag. Crush the sliced almonds with your hands or the back of a spoon until almonds are broken down into smaller pieces. Pour crushed almonds into a bowl.
  3. Next, remove almond butter mixture from the fridge and spoon out a heaping tablespoon and roll into a ball. Roll the ball into the crushed almonds until the surface is coated. Repeat until all of the mixture is used.

Vegetarian 3-Bean Chili

This chili makes a quick, easy and healthy meal that’s perfect for those busy weeknights! Vegetarian and gluten-free.

I cannot get enough of this vegetarian chili! Seriously, it’s good stuff. I’ve already had it three times this week….and counting…..yeah I’ve got some serious vegetarian cravings these days. Plus, I’ve served it up to friends, family and co-workers. The chili is THAT good! It’s been getting rave reviews so I figured it’s time to get this recipe up on the blog! I love how it is packed full of fibre and protein…so it’s super filling, while still being heart-healthy! It’s also SO easy to make. It’s one of those meals that you can whip up on a weeknight when you have no clue what to make. I love making a huge batch of it and freezing the rest for an easy meal the following week! I’m all about those stress-free meals, especially after a busy work day!

Vegetarian 3-Bean Chili

Yield: Makes 6-8 servings

Ingredients

  • 1 Tbsp. olive oil
  • 2 small onions, chopped
  • 2 red peppers, diced
  • 1 tsp. ground cumin
  • 2 Tbsp. chili powder
  • 1/8 tsp. red pepper flakes (optional)
  • 1 1/2 cups each cooked kidney, black beans and chickpeas (or 1 no salt-added can of each, rinsed)
  • 6 oz tomato paste
  • 28 oz can no salt-added diced tomatoes
  • 8 oz tomato sauce
  • 1 cup frozen corn
  • 1 Tbsp. honey
  • Salt and pepper, to taste
  • Optional garnishes:
  • Chopped green onion
  • Diced avocado
  • Shredded cheese
  • Dollop of Greek yogurt

Instructions

  1. In a large pot, sauté onions and red pepper in olive oil until tender
  2. Add spices, and mix until combined. Cook additional 1 - 2 minutes.
  3. Add tomato paste and stir for 1 minute
  4. Add remaining ingredients and heat, covered, over medium heat, stirring occasionally, for about 30 min.

Asian Lettuce Wraps

These lettuce wraps are tasty and filling with only 100 calories per bite! Perfect to serve at your next party!

Next weekend is Superbowl and I can’t think of a better appetizer to serve up that these lightened up Asian Chicken Lettuce wraps! What I love the most about these little appetizers is that they are not only delicious, but actually quite filling since they contain 8 grams of protein per serving! They are also super low carb, which will most likely be welcome with the carb overload often present at Superbowl. Think pizza, nachos, chili with a warm bun…yeah, you get my vibe. So start off right with some filling protein and veggies and you’ll be less likely to go crazy indulging on the not-s0-healthy options.

Asian Lettuce Wraps

Yield: Makes 10 lettuce wraps

Ingredients

  • 2 tsp. hot sauce
  • 1 tbsp. reduced sodium soy sauce
  • 1 tbsp. natural peanut butter
  • 4 cloves garlic, minced
  • 1 tbsp. minced fresh ginger
  • 1 tbsp. honey
  • 1 tbsp. rice vinegar
  • 1 tbsp. sesame oil
  • Juice of half a lime
  • 1 lb extra lean ground chicken (or preferred ground meat)
  • 1 medium onion, chopped
  • 10 Boston or Bibb leaves
  • Garnish with:
  • 1 large carrot, grated
  • 4 green onions, chopped
  • Sprinkle of sesame seeds
  • Drizzle of hot sauce (optional)

Instructions

  1. In a small bowl, whisk together the first nine ingredients until well combined.
  2. In a large skillet, cook chicken and onion over medium heat for 6-8 minutes or until chicken is no longer pink and onion is tender.
  3. Pour the sauce into skillet and stir, cooking until heated through.
  4. To serve, evenly distribute chicken mixture between ten lettuce leaves. Garnish with grated carrot, green onion, sesame seeds and hot sauce, if desired. Fold lettuce over filling and enjoy!
