Adorable mini cucumber cupcakes topped with an avocado and goat cheese icing. These little bites are the perfect appetizer for any party of get together. They’re healthy, low in calories, vegetarian and gluten-free!
Woah baby…I can’t believe it’s Friday already! Where did this week go?!
I’m definitely not complaining.
I love the weekend.
It should be an especially fun weekend since it’s Matt’s little nephew’s first birthday. He’s such a cutie!
And I’m sure he’ll get spoiled like crazzzzy…
Speaking of cute and getting spoiled, I am totally going to spoil you with this adorable little appetizer.
I am in LOVE with these little mini cucumber cupcakes.
This recipe idea stemmed from the fact that there are loads of mini cucumbers available in the grocery store right now.
So naturally, since I’m always trying to come up with creative recipe ideas, I thought I would transform these mini cucumbers into light and refreshing little bites.
The BEST part about these little cupcakes is the fact that they’re topped with this delicious mixture of avocado and goat cheese (AKA the icing).
I not only love the taste, but they just look so pretty with that summery pastel green colour.
You know me, anything pretty…. I’m in!
I highly recommend that you pipe the pretty pastel “icing” onto the mini cucumbers.
People will think you have crazy fancy skills, but really all you’re doing is plunking the dip into a piping bag and squeezing it out.
Just don’t squeeze too hard or too fast or it won’t look that classy.
Also, make sure that there are no avocado chunks when piping.
When I first starting piping the mixture onto the cucumbers, I had some hunks of avocado that got stuck in the tip.
Suddenly a bunch of “icing” came oozing out….
It was messy.
And probably not the look you’re going for..
Don’t worry, it’s not as hard as it looks to make it look somewhat decent.
These are the perfect light appetizer to make for a party or get together, especially if your crowd is health conscious.
One of these little bites is only 10 calories!
That’s what I call a light, refreshing and waist-friendly appetizer!
