These Chicken Caprese Burgers are low in carbs, high in protein and loaded with flavour. Serve them with a drizzle of balsamic glaze and fresh basil and tomato for true Caprese-style burgers! {gluten-free & keto-friendly}
As soon as the warmer temperatures roll around, I get an instant craving for burgers. Well, actually, I crave burgers all year round, but ESPECIALLY in the summertime.
A few years ago for Father’s Day, I made these Roasted Garlic & Feta Chicken Burgers. And let’s just say, they soon became one of my favourite homemade burgers of all times.
To keep up with the tradition of making awesome burgers for Father’s Day, I thought I would try out a new version this year.
Chicken Caprese Burgers.
As you can see, we still maintained the whole Mediterranean theme, but just switched up the flavours a bit to create a new totally amazing burger.

What ingredients go into these Chicken Caprese Burgers?
The one reason why I love my Chicken Feta Burgers so much is because they’re easy and I can make them off by heart due to the simple ingredients list.
So, I wanted these Chicken Caprese Burgers to be the same way.
Simple, but still jam-packed with flavour.
Here’s what you’ll need:
- Roasted Garlic
- Extra lean ground chicken
- Mini bocconcini pearls (AKA mozzarella balls)
- Sun-dried tomatoes
- Fresh basil
- Salt & pepper
If you aren’t able to find the mini bocconci pearls, which is usually in the deli or cheese section of your grocery store, you can use regular bocconcini and cut it up into smaller pieces or sub in regular mozzarella cheese.
I love the pearls because they’re small and easy to incorporate into the rest of burger mixture so you get bits of gooey cheese in each bite.
How to Serve Chicken Caprese Burgers
One of the reasons why I love burgers is because they’re versatile and you can serve them up in so many different ways.
Now if you want to make these burgers lower carb, you can wedge the burger in between two large tomato slices to act as a “bun.”
Drizzle with some balsamic reduction (more about this later) and top with some fresh basil and you’ve got yourself a true Caprese burger.
If you prefer, you can also serve it on a bun with all of the fixings mentioned above or your own desired toppings.
Alternatively, for a lighter meal, you can serve them naked along with a salad. They would taste amazing along with this Greek Cucumber Noodle Salad!
How to Make Balsamic Reduction
So I mentioned balsamic reduction above, but how do you actually make that?
Well, once again, it’s quite simple and only requires one ingredient!
To prepare the reduction, add two cups of balsamic vinegar to a small sauce pan and turn the stove up to medium high heat. Bring the vinegar to a boil. Reduce to medium low heat and allow to simmer for about 20 minutes or until the amount reduces down to about half a cup.
Remove from heat and allow to cool for at least 15 minutes so that it can continue to thicken.
Pour in a jar or container and store in the refrigerator for up to a month.
Use however you see fit…like for these burgers!
Alternatively, many grocery stores carry pre-made balsamic glazes that you can purchase if in a pinch.
It can definitely add some great flavour to these burgers!
Can I freeze these burgers?
Yes, you can either freeze them from a cooked or uncooked state.
I generally find it’s best to freeze in a large ziplock bag or in an air-tight container separated by parchment paper.
Please note that if cooking them from an uncooked frozen state, you may need to increase the cooking time slightly to ensure that they’re completely cooked through.
Either way, they’re great for meal prep since they are perfectly portioned and you can make up a large batch of them at once!

Chicken Caprese Burgers
Ingredients
- 5 garlic cloves roasted
- 1 1/2 lbs extra lean ground chicken
- 1/2 cup mini bocconcini pearls mozzarella balls
- 1/2 cup finely chopped sun-dried tomatoes
- 1/4 cup chopped fresh basil
- 1/2 tsp salt and pepper
To serve:
- A drizzle of balsamic reduction
- Fresh basil leaves
- Fresh tomato slices
Instructions
- Preheat the oven to 375 degrees F. Place garlic cloves on a baking sheet and drizzle with a bit of olive oil. Roast in the oven for 8-10 minutes or until lightly browned and fragrant.
- Meanwhile, mix the ground chicken, bocconcini, sun-dried tomatoes, basil and salt and pepper in a large bowl until combined.
- Line a baking sheet with parchment paper. Form the mixture into four burgers and place each burger on the parchment paper.
- Preheat your grill to medium-high. Soak a wadded paper towel generously with olive oil and use tongs to rub it over the clean grill grates, heavily oiling them. Ease the burger patties onto the grill and do not move them for 6 minutes, leaving the cover of the grill open. After 6 minutes, flip the burgers just once and let them continue to cook for 8-10 minutes, or until the burgers release from the grill and the interior temperature of the thickest part of the burgers reaches 165°F. Transfer the burgers to a clean plate and serve with desired toppings.
