- Raspberries: Are frozen into the mould to mimic a wreath. You can use fresh or frozen raspberries or sub in another berry such as cranberries or diced strawberries. You can also add in orange slices as well to add more colour and dimension.
- Orange juice concentrate: You can find this in the frozen section along with the frozen cans of juice. Allow it to partially thaw before mixing in with the rest of the punch ingredients. You can also sub in another frozen concentrate such as pineapple juice.
- Cranberry cocktail: Gives the punch a festive flavour and colour. Use regular, reduced sugar cranberry cocktail or 100% pure unsweetened cranberry juice for more health benefits.
- Soda water: Use an unsweetened low sodium soda water such as Perrier or club soda. You can use regular or flavoured (but not sweetened), if preferred.
Step by step instructions
- Pour the apple juice and raspberries into an approximately 4 cup (1L) ring mould or bowl and freeze until ready to serve.
2. When it’s time to serve the punch, combine the orange juice concentrate and cranberry cocktail in a large punch bowl or pitcher.
3. Add the soda water and mix until combined.
4. Place the frozen apple juice-raspberry ring in the bowl to float. Serve cold.
